How We Source, Grade & Certify Our Buffalo

Every step from pasture to pallet is governed by strict quality protocols to ensure our wholesale customers receive consistent, premium-grade product every time.

Our Sourcing Philosophy

We work exclusively with ranchers who practice regenerative grazing. Our buffalo herds are raised on open pasture with no added hormones or routine antibiotics. Animals are grain-finished for a minimum of 120 days to develop the intramuscular fat that gives our steaks their distinctive flavour.

Each ranching partner is audited annually against our supplier code of conduct, which covers animal welfare, environmental standards, and operational transparency.

Our Quality Process

Intake Inspection

Every carcass is inspected by our quality team upon arrival at the facility. Weight, grade, and temperature are recorded.

USDA Grading

All product is graded by USDA-certified inspectors or equivalent authority. Only Select grade or above proceeds to cutting.

Precision Cutting

Our master butchers break down carcasses according to predefined customer specifications or standard wholesale templates.

Aging & Chilling

Wet-aged in vacuum packaging for 14–21 days at controlled temperatures to develop tenderness and flavour depth.

Packaging

Vacuum-sealed in food-grade film, labelled with cut, weight, date, and lot number. Custom labelling available.

Cold-Chain Dispatch

Packed into insulated cartons and dispatched via certified cold-chain transport. Temperature logs accompany every shipment.

Certificate Issuance

Health, veterinary, and export certificates issued by our in-house documentation team or partnered certifying bodies.

Customer QC Support

We maintain samples from every lot for 90 days. If any quality issue arises, our team investigates within 48 hours.

Traceability

Our lot-coding system allows complete traceability from the individual animal ID through to the final packaged unit. In the event of a recall or quality query, we can identify and isolate the relevant lot within two hours.

Wholesale customers receive a traceability report with each order, giving you the documentation you need to satisfy your own customers and regulatory bodies.

Xaman-verified order receipts. For large wholesale shipments, clients using Xaman can attach digital proof of payment to their quality documentation package — providing a complete, auditable record from order placement through to delivery.
